Cold Rice-Vegetable Salad - cooking recipe

Ingredients
    2 cups cold cooked long-grain rice
    1/2 cup sliced scallion, white and some of the green
    1 medium green bell pepper, seeded and chopped
    1 cup cooked green peas
    1 cup diced celery
    1 cup sliced radish
    2 canned pimientos, drained and diced
    1/3 cup olive oil
    2 -3 tablespoons wine vinegar
    1/2 teaspoon dried tarragon
    3 tablespoons chopped fresh parsley
    salt
    pepper
Preparation
    Combine rice and vegetables in a large bowl.
    Combine remaining ingredients and mix with rice and vegetables.
    Chill.
