Southwest Quinoa Salad - cooking recipe

Ingredients
    2 cups quinoa, uncooked
    1/2 tablespoon vegetable stock base
    1 (12 ounce) can black beans, rinsed
    1 red pepper, chopped
    1 cup jalapeno, from a jar, chopped
    1 bunch fresh cilantro, chopped
    1 medium white onion, chopped
    1 (10 ounce) bag frozen corn
    1/4 cup lime juice
    1 dash apple cider vinegar
    1 dash lemon juice
Preparation
    cook quinoa as directed on package with 4 C water and the vegetable base.
    while the quinoa is cooking, combine the black beans, red pepper, jalapenos, cilantro, and onion in a bowl.
    When the quinoa is done cooking add the frozen corn to it and stir. let cool a bit.
    combine the quinoa mix and the veggies, add the remaining ingredients, stir and serve. Can also be refrigerated for later.
