Jan'S Carrot Cake - cooking recipe
Ingredients

2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
1 dash ginger
1 1/2 cups vegetable oil
4 eggs
2 cups grated raw carrots
1 (8 3/4 ounce) can crushed pineapple, drained
1/2 cup chopped nuts
optional 1/2 cup raisins
Frosting
1 (8 ounce) package cream cheese, softened
1 lb powdered sugar
1/2 cup butter, softened
1 teaspoon vanilla
Preparation

Preheat oven to 350.
Sift all dry ingredients together.
Stir in oil.
Add eggs one at a time and beat well after each addition.
Add carrots, nuts, and pineapple last.
Pour into 9x13 pan and bake for 35-40 minutes.
Frosting:.
Beat all ingredients together and frost when cake is cool.
