Switchel - cooking recipe

Ingredients
    1 cup apple cider vinegar
    1/2 cup molasses
    1 cup sugar
    2 ounces ginger, grated fresh
    2 quarts water, plus more later
Preparation
    Simmer apple cider vinegar, molasses, sugar, and ginger in 1 to 2 quarts of water for 15 minutes.
    Add enough water to make a gallon of beverage.
    Chill and serve. For optimal benefit, do not strain out the ginger. Optional: add 1/2 cup of oatmeal at beginning.
