New Potatoes With Lemon Thyme Dressing - cooking recipe

Ingredients
    2 lbs new potatoes, unpeeled
    Dressing
    3 tablespoons white wine vinegar
    1 tablespoon lemon juice
    2 teaspoons Dijon mustard
    1 shallot, minced
    6 scallions, white part only, chopped (reserve tops for garnish)
    2 tablespoons chopped lemon thyme
    1/4 cup chopped parsley
    3 tablespoons vegetable oil
    3 tablespoons olive oil
    salt & freshly ground black pepper
    Garnish
    paprika
    sliced scallion top
Preparation
    Steam or cook potatoes until just tender.
    Cool slightly and slice into quarters or chunks, and place in a serving bowl.
    Combine dressing ingredients, whisking in oils gradually until thoroughly blended.
    Pour dressing over warm potatoes, tossing gently until combined.
    Sprinkle potatoes with paprika and scallion tops.
