Southern Fried Potato Salad - cooking recipe
Ingredients

3 cups potatoes, diced
oil (for frying)
salt and pepper
2 -3 hard-boiled eggs, chopped
1 cup chopped celery
1/2 cup relish
1/2 cup chopped green onion
3/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
Preparation

Fry the potatoes (in batches if necessary) in hot oil until brown and crispy. Drain on paper towels and season with salt and pepper.
Combine remaining ingredients in large bowl.
Gently fold in warm potatoes and coat with mixture, being careful not to break the potatoes.
Serve immediately.
