Savory Breakfast Muffins - cooking recipe

Ingredients
    2 cups whole wheat flour
    1 cup all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon fresh ground black pepper
    1/4 teaspoon salt
    2 eggs
    1 1/3 cups buttermilk
    3 tablespoons olive oil
    2 tablespoons melted butter
    1 cup thinly sliced scallion
    3/4 cup diced Canadian bacon (3 ounces)
    1/2 cup grated cheddar cheese
    1/2 cup minced red pepper
Preparation
    Preheat oven to 400\u00b0F Coat muffin tin with cooking spray or line with papers.
    Combine first 6 ingredients in bowl.
    In another bowl, whisk together eggs, buttermilk, oil, and butter. Fold in scallions, Canadian bacon, cheese, and red pepper.
    Make a well in the middle of the dry ingredients. Add wet ingredients and mix until just moistened. Scoop into muffin tin.
    Bake for 20 - 22 minutes. Let cool for 5 minutes before removing from tin. Serve warm!
