Banana Cardamom Muffins - cooking recipe

6 tablespoons butter
1 cup sugar
2 bananas, mashed
2 eggs
1 cup buttermilk
1 teaspoon vanilla
1/2 teaspoon salt
1 tablespoon baking powder
1 teaspoon ground cardamom
2 cups flour
Preparation

Preheat oven to 425\u00b0F, spray muffin tin with non-stick cooking spray.
In a bowl, cream butter and sugar.
Add the bananas, eggs, buttermilk and vanilla and mix well.
In another bowl, mix the salt, baking powder, cardamom and flour.
Add the flour to the banana mixture and mix until just combined (Don't over mix!).
Fill muffin tin and bake for 19 minutes.
