Diabetic Carrot Cake - cooking recipe

Ingredients
    4 eggs
    2 tablespoons vanilla extract
    1 1/2 cups cooking oil
    3/4 cup frozen unsweetened apple juice (3/4 can concentrate-thawed)
    3 teaspoons cinnamon
    3 cups raw grated carrots
    2 teaspoons baking soda
    1 cup raisins
    1 teaspoon salt
    1 cup nuts, chopped
    2 cups all-purpose flour
Preparation
    Beat eggs and add oil. Sift together dry ingredients. Add to egg & oil mixture. Add vanilla & juice. Stir in carrots, raisins & 1/2 cup nuts.
    Pour batter into greased cake pan and sprinkle 1/2 cup nuts on top.
    Bake in preheated oven for 325 degrees for 40 to 45 minutes.
