Italian Sausage And Spinach Scramble - cooking recipe

Ingredients
    1/2 cup chopped red pepper
    4 -5 ounces frozen spinach or 1/2 cup fresh spinach, torn into almond-sized pieces
    pepper
    1 lb ground Italian sausage
    1/4 cup onion, chopped
    8 large eggs, lightly beaten
    1/2 cup feta cheese, crumbled
Preparation
    Spray frypan with non-stick spray.
    Add the sausage pieces, bell pepper, and onion. Cook, stirring, until the sausage has browned and the pepper and onion are soft, 3-4 minutes.
    Stir in the spinach and cook about 1 minute.
    Pour in eggs and season with pepper.
    Reduce heat to medium-low, sprinkle the feta cheese on top, and cook, stirring, until the eggs have just set, approximately 2 minutes.
    Serve immediately. (I also like it warmed up).
