Ingredients

1/8 teaspoon kosher salt (or sea salt)
1 tablespoon red wine vinegar
1 tablespoon shallot, finely minced
1/2 teaspoon Dijon mustard
3 tablespoons olive oil
Preparation

In a small bowl, mix together the salt, vinegar, and shallot. Let stand for about 10 minutes.
Whisk in the Dijon mustard and olive oil.
Taste. If too sharp, add more olive oil and salt.
