Ube Waffles With Avocado And Eggs - cooking recipe

Ingredients
    Waffles
    2 cups all-purpose flour
    4 teaspoons baking powder
    1 tablespoon granulated sugar
    1/2 teaspoon salt
    2 large eggs
    1 1/2 cups whole milk
    1 cup mashed cooked purple sweet potato
    3 tablespoons vegetable oil
    Topping
    2 medium avocados
    1 tablespoon fresh lime juice
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 teaspoon crushed red pepper flakes
    6 fried eggs
    1/2 a red onion, thinly sliced
    1/4 cup crumbled feta cheese
    2 tablespoons chopped fresh parsley
Preparation
    To make the waffles, in a large bowl, whisk together the flour, baking powder, sugar and salt. In a separate bowl, whisk together the eggs, milk, ube, and vegetable oil until well combined. Pour into the dry ingredients and stir with a rubber spatula until the mixture comes together. Try not to over mix.
    Pour the mixture by the 1/3 cup into a preheated greased waffle iron. Cook until lightly golden and crispy, according to the directions on your waffle iron.
    Transfer to a wire rack and keep warm in a preheated 250 degree F oven, while you continue to make the rest.
    Scoop out the avocado and place it in a medium bowl. Using a fork, mash together with the lime juice, salt, pepper, and a pinch of crushed red pepper flakes.
    To assemble the waffles, top each with a bit of the mashed avocado, a fried egg, and sprinkle with crushed red pepper flakes, red onion, feta and parsley. Serve immediately and enjoy.
