Ingredients

1/3 cup brown sugar
1 lemon, juice of
2 cups fresh pineapple chunks (3 - 1/2 inch rings pineapple, halved)
1/8 teaspoon grated gingerroot
1/8 teaspoon grated jalapeno
2 tablespoons Kahlua
1/4 cup raisins (optional)
Preparation

Melt sugar and lemon juice add pineapple top with ginger, jalapeno and optional raisins simmer till tender flipping half way through. About 5-7 minutes.
Serve hot or chilled.
