Merryfield Apple Cake - cooking recipe

Ingredients
    3 cups flour
    2 cups sugar
    1 cup canola oil
    1 teaspoon baking soda
    1 teaspoon salt
    2 teaspoons vanilla
    3 eggs
    3 cups diced peeled cooking apples
    1 cup chopped walnuts
    1/2 cup chopped raisins
    confectioners' sugar
Preparation
    Preheat oven to 325\u00b0F.
    Grease and flour two 8x8-inch square pans.
    Mix first 7 ingredients with mixer on low.
    Beat 3 more minutes.
    Stir in apples, nuts and raisins.
    Spread in pans, bake 1 hour.
    Cool.
    Place paper doily on top of cake.
    Sprinkle with confectioner's sugar.
    Remove doily.
