Garlicky Barley Vegetable Chicken Soup For One Or Two - cooking recipe

Ingredients
    1/4 cup chopped onion
    1/4 cup chopped zucchini
    1/4 cup chopped carrot
    1/4 cup chopped cauliflower
    1 cup canned Italian tomatoes
    2 cups low sodium vegetable broth
    1/2 cup cooked barley
    3 ounces boneless skinless cooked chicken breasts, cubed
    1 tablespoon oil
    1/4 teaspoon minced garlic
    1 teaspoon Italian herb seasoning
Preparation
    In a saucepan saute the garlic and onion in the oil until the onion is clear. Add veggies and lightly saute. Add broth and tomatoes and simmer about 5-8 minute Stir in the barley, chicken and herbs heat through.
