Homemade Lemon Curd - cooking recipe
Ingredients

5 eggs
3/4 cup caster sugar
1 lemon, rind of, grated
2/3 cup lemon juice
125 g chilled butter, cut into small cubes
Preparation

Beat eggs and sugar until pale and doubled in volume.
Stir in lemon rind and juice.
Place bowl over a pan of simmering water.
Add butter piece by piece, whisking constantly until thick.
Serve cold.
