Apple Muffins (Very Healthy) - cooking recipe

Ingredients
    1 1/2 cups wholemeal self-rising flour
    1/2 teaspoon mixed spice
    1/2 teaspoon cinnamon
    1/2 cup sultana
    2 egg whites
    2 tablespoons cold-pressed almond oil
    1 cup chopped cooked apple
    1 tablespoon honey or 1 tablespoon apple juice concentrate
    1/2 cup soymilk
Preparation
    Sift flour and spices and add sultanas.
    Beat egg whites and add the oil, apple, honey and milk and blend thoroughly. Add to the dry ingredients and stir until thoroughly mixed.
    Spoon into a lightly greased muffin tin and bake in a moderate oven for 17 minutes or until cooked.
