Crosby Molasses Carrot Cake - cooking recipe

Ingredients
    CAKE
    3/4 cup vegetable oil
    1/4 cup molasses
    1 1/2 cups white sugar
    4 eggs, unbeaten, one at a time
    2 cups flour
    2 teaspoons baking soda
    2 teaspoons cinnamon
    1 teaspoon salt
    1/2 cup walnuts, chopped
    3 cups carrots, grated, packed
    ICING
    1 (8 ounce) package cream cheese
    1/2 cup margarine
    3 1/2 - 4 cups confectioners' sugar
    2 teaspoons vanilla
Preparation
    CAKE:.
    Preheat oven to 325\u00b0F.
    Add ingredients in the above order, mixing well after each addition. Pour into prepared 2.5 Litre - 3 litre tube pan.
    Bake at 325F for 1 1/4 - 1 1/2 hours.
    Let cool before icing.
    ICING:.
    Cream cheese and margarine. Beat in the confectioner's sugar gradually, until you reach the desired stiffness. Mix in vanilla. Spread on cooled cake. Garnish with walnut pieces.
