Smoked Prime Rib (Rich Davis, K.C. Masterpiece Resturant) - cooking recipe

Ingredients
    8 lbs prime rib roast
    1 cup sugar
    1/2 cup paprika
    1/4 cup kosher salt
    1/4 cup celery salt
    3 tablespoons onion powder
    3 tablespoons chili powder
    2 tablespoons cumin
    2 tablespoons black pepper
    2 teaspoons mustard powder
    1 teaspoon cayenne pepper
Preparation
    Place dry rub seasonings over entire roast surface.
    Grill roast in smoker (indirect heat) for 3 to 4 hours at 200 to 250 deg. or until a meat thermometer indicates 140 deg (for M-Rare).
    Sprinkle crushed rosemary leaves 3/4 of the way thought the cooking time.
