One Pot Ham And Potato Casserole - cooking recipe

Ingredients
    3 tablespoons butter
    1/4 cup diced onion
    1/4 cup diced celery
    3 tablespoons flour
    1 cup milk (can add more if it thickens too much)
    2 cups shredded cheddar cheese
    1/2 cup sour cream
    1 cup frozen peas
    1 cup frozen corn
    1 cup diced cooked potato
    2 cups diced ham
    1/4 teaspoon pepper
    1/8 teaspoon cayenne (or to taste)
    1/4 teaspoon salt (or can omit since ham and cheese are salty)
Preparation
    Melt butter in a large Dutch oven or oven safe heavy bottom pot.
    Add onions and celery and saute for 1-2 minutes until softened.
    Whisk in flour and cook for 1-2 minutes.
    Whisk in milk a little at a time and cook until just beginning to boil and sauce has thickened.
    Remove from heat and add 1 and 1/2 cup of the cheese and stir until incorporated.
    Stir in sour cream.
    Add ham, potatoes, corn and peas.
    Cover and place in 375 F (190 C) oven for 25 minutes.
    Remove cover, sprinkle remaining cheese on top and cook for additional 5 minutes.
