Tex–Mex Black Bean Burgers - cooking recipe

Ingredients
    Topping
    1/2 cup tomatoes, diced
    1/2 cup cucumber, diced
    2 green onions, sliced
    1/2 teaspoon oregano
    1 tablespoon lime juice
    2 teaspoons olive oil
    salt and pepper
    1/2 cup guacamole (optional)
    1 cup shredded lettuce
    Burgers
    1/2 cup onion, finely diced
    1 garlic clove, minced
    1/2 cup cooked corn (fire roasted if you can)
    1/2 cup black beans, drained and rinsed
    1 1/2 lbs ground turkey
    1 egg
    1/4 cup breadcrumbs
    1 teaspoon paprika
    2 teaspoons chili powder
    salt and pepper
Preparation
    Combine all topping ingredients in a bowl and set aside.
    Heat grill on medium.
    In a large bowl, combine all burger ingredients and mix until just combined. Do not over mix.
    Divide mixture evenly into four and make patties approx 1 to 1 1/2 inch in thickness. Grill burgers 5 to 7 minutes each side or until the internal temperature reaches 170\u00b0F (77\u00b0C).
    Spread some guacamole on the bottom half of each bun, top with shredded lettuce, the Tex-Mex burger and a few spoonfuls of the tomato topping mixture. Enjoy.
