Parmesan Spinach - cooking recipe

Ingredients
    1 1/2 tablespoons unsalted butter
    1/2 onion, minced
    1 1/2 tablespoons flour
    1 1/2 cups milk
    2 (10 ounce) packages frozen spinach, thawed and liquid squeezed out
    3/4 cup parmesan cheese, grated
    1/2 teaspoon lemon peel, grated
    1/4 teaspoon nutmeg, freshly grated
Preparation
    In a medium saucepan, melt butter over medium heat; add onions and cook until softened, about 5 minutes.
    Add flour and stir for 1 minute; remove from heat and gradually whisk in the milk.
    Return to a simmer until slightly thickened, 2 minutes.
    Stir in spinach, 1/4 cup water, 1/2 cup Parmesan cheese, lemon peel, and nutmeg; cook until sauce is thick and spinach is tender, 10 minutes.
    Thin with additional water, if necessary, stir in remaining Parmesan, and season with salt, if necessary.
