Ingredients

3 lbs onions, diced
1 1/2 tablespoons butter
3 cups beef broth
3 cups chicken broth
1 tablespoon instant coffee
1 pinch salt
1 pinch pepper
crouton
mozzarella cheese, sliced
Preparation

Saute onions in butter.
Transfer onions to large saucepan. Add beef and chicken broths, coffee, salt, and pepper to taste.
Simmer for several hours.
Pour soup into individual oven-proof bowls.
Top each bowl with croutons, then mozzarella cheese.
Bake at 350 for 25 minute.
*Note: To make croutons, slice day old French bread and broil for 3 to 4 minutes or until golden brown, turning each minute.
