Unstuffed Pepper Soup - cooking recipe

Ingredients
    1 lb ground beef
    1/2 chopped onion
    3 bell peppers, any color, cored and seeded and chopped spoon sized
    14 ounces diced tomatoes (I used diced with green pepper and onion)
    1 (8 ounce) can tomato sauce
    1 1/2 cups water
    1/4 cup balsamic vinegar
    1/8 teaspoon salt
    1/8 teaspoon black pepper
    1/4 cup brown sugar
    1 cup V8 vegetable juice (or 1 small can with water to make it to a cup)
    1/2 cup Minute Rice
Preparation
    Brown onion, garlic, pepper pieces and ground beef in skillet.
    Mix all other ingredients (except rice) in pot and bring to a boil.
    Add minute rice to tomato mixture, stir, put on lid, and set aside for 5 minutes.
    Drain meat and pepper mixture in a colander.
    Add to soup pot and simmer for 15 more minutes.
