Orange Roughy With Vegetables - cooking recipe

Ingredients
    2 lbs orange roughy fillets
    2 tablespoons lemon juice, divided
    1 (16 ounce) can stewed tomatoes, cut
    1 cup celery, minced
    1 cup onion, chopped
    1 cup bell pepper
    1 cup mushroom, sliced
    1/4 teaspoon thyme
    1 pinch garlic powder
    1 pinch hot pepper flakes
    1 pinch hot pepper flakes
Preparation
    Spray a 13x9-inch pan with non-stick cooking spray and sprinkle with 1 tablespoon lemon juice.
    Arrange fish in a single layer and sprinkle with 1 tablespoon lemon juice.
    Combine remaining ingredients and spoon over fish.
    Bake uncovered in a 350\u00b0F oven for 25-30 minutes, until fish flakes and sauce is thick.
