Wood Smoked Salmon & Orzo Salad - cooking recipe

Ingredients
    1 cup orzo pasta, cooked
    1 teaspoon sea salt, flakey
    fresh ground black pepper
    1/2 cup peas, cooked
    1 tablespoon dill, fresh and chopped
    1 lemon, grated zest only
    1/4 cup flat leaf parsley, chopped
    3 tablespoons olive oil, extra virgin
    2 tablespoons lemon juice
    2 cups baby spinach leaves
    200 g salmon, hot smoked and broken into chunks
Preparation
    Place orzo in a bowl, add salt and pepper to taste.
    Fold through the peas, dill, lemon rind and parsley.
    Drizzle in the olive oil and lemon juice.
    Gently toss everything together.
    Add the spinach and salmon and fold through.
    Serve.
