Refried Rice - cooking recipe
Ingredients

1 cup rice
1/4 cup onion, chopped
1 (8 ounce) can tomatoes and green chilies
3 tablespoons shortening
chicken broth
salt and pepper
Preparation

Put shortening in medium frying pan. Pour in rice. Fry rice on low heat until a golden brown.
Add onions and dry about 2 more minutes.
Mash tomatoes in small bowl and add to frying pan. Season with salt and pepper. Add broth, enough to cover top of rice. Put a lid on the frying pan, being sure not to remove lid or stir rice while cooking.
Let simmer 1/2 hour to 45 minutes. Rice should be tender when done.
