Leek Fried Rice With Fried Eggs - cooking recipe
Ingredients

3 tablespoons peanut oil, divided
3 tablespoons diced ginger, divided
1/3 cup diced leek (white part only)
2 garlic cloves, minced
2 cups cooked jasmine rice, cold
2 teaspoons light soy sauce
1 chopped tomato
2 green onions, sliced on diagonal
2 teaspoons sesame oil
2 eggs
Preparation

Fry eggs.
Heat 2 tablespoons oil in wok; add 2 tablespoons ginger and fry until golden brown, about 5 minutes. Drain and set aside.
Heat remaining 1 tablespoon oil in wok. Add leek and saute 5 minutes. Add garlic and remaining 1 tablespoon ginger; cook 2 minutes. Add rice; stir-fry until slightly colored, about 4 minutes. Add soy sauce and cook 2 minutes.
Place rice on platter; top with green onion, sesame oil, fried ginger, and eggs.
