Pork Stock, Jim'S Meat Market Roasted Chops Bones - cooking recipe

Ingredients
    4 lbs pork side ribs or 4 lbs pork chops, bones
    1/2 cup diced tomatoes, and juices
    1 gallon cold water
    6 black peppercorns
    3 cups onions (quartered , do not peel leave the skin on)
    2 cups carrots, scraps
    1 cup celery rib, scraps
    12 large fresh garlic cloves, sliced in half (I just use a whole head garlic)
    1 tablespoon salt (or to taste)
Preparation
    set oven to 400 f.
