Ingredients

250 g white sugar
250 g desiccated coconut
3 egg whites
1 teaspoon lemon zest
1 pinch salt
Preparation

Beat egg whites until very firm, gradually adding the sugar and a pinch of salt. About 5-10 minutes.
Slowly and carefully incorporate coconut and lemon cest.
Cover a baking tray with either non stick baking parchment or a little melted butter and form little \"heaps/piles\" out of the coconut batter (about 1tsp. each).
Bake at 180\u00b0C for about 15 minutes. Kokosbusserl are supposed to be soft and moist in the middle, be careful not to burn them.
