Croatian Tripe - cooking recipe
Ingredients

3 tablespoons sunflower oil
1 onions, chopped or 250 g onions
4 garlic cloves, chopped
100 g carrots, chopped
100 g celery root, chopped
80 g fresh bell peppers, chopped
150 g bacon, cut into small pieces
500 g precooked tripe
1 tablespoon ground sweet red paprika
1 1/2 tablespoons tomato puree
1 bay leaf
800 ml beef broth, from 1 cube
1/3 cup parmesan cheese, grated
Preparation

In a large saucepan, heat the sunflower oil. Add the onion, garlic, celery root, carrot, bell pepper and pancetta and saute for 3 minutes or until they are soft.
Add the tripe, sweet red paprika, tomato puree and bay leaf, stir.
Add the beef broth, cover the pan and bring to the boil. Lower the flame and cook over low heat for 20 minutes.
Serve sprinkled with grated Parmesan cheese.
