Pepperoni Soft Pretzels (Bread Machine) - cooking recipe

1 1/4 cups water (80 F/27 C)
1 egg yolk, room temperature (save white for egg wash)
1 tablespoon oil
2 tablespoons sugar
1 teaspoon salt
1/8 teaspoon white pepper
3 1/2 cups bread flour
1 tablespoon active dry yeast
1 cup thin sliced pepperoni
2 tablespoons parmesan cheese
Egg Wash
1 egg white
1 tablespoon water
Toppings (optional)
1 tablespoon kosher salt
1 tablespoon sesame seeds
Preparation

Program machine for the Dough setting.
When the bread machine beeps, place dough on a lightly floured surface and divide into 16 pieces.
Roll each piece into a 16 inch rope. Cross the ends of the rope to make a loop; twist the crossed ends once and fold across the loop.
