Wild Rice Mix Pilaf - cooking recipe

Ingredients
    1 tablespoon olive oil
    1/3 cup diced onion
    1/3 cup diced carrot
    1/3 cup diced celery
    14 ounces chicken broth
    1 cup lundberg wild blend rice
    1 tablespoon parsley
    salt and pepper
Preparation
    Saute onion, celery and carrot until soft.
    Add chicken broth, rice, parsley and salt and pepper to taste. After bringing to a boil, lower temperature to simmer for 45 minutes. Take off heat and let sit covered for 10 minutes before fluffing with fork and serving.
