Golden Flounder - cooking recipe

Ingredients
    4 flounder fillets (double fillets)
    2 eggs, separated
    1 pinch salt
    1 pinch pepper
    1 cup olive oil
    1 tablespoon lemon juice
Preparation
    Place the egg yolks in a food processor or blender. Blend in the salt and pepper. Pour the oil through the funnel in a thin, steady stream with the machine running. Add in the lemon juice. Beat egg whites until stiff but not dry. Fold in the yolk mixture. Broil the fish about 2 inches from the heat source for about 6-10 mins, depending on the thickness of the fillets. Spead the sauce over the fillets and broil 3-5 minutes longer or until the sauce puffs and browns lightly.
