Baked Peppers Au Gratin - cooking recipe

Ingredients
    8 large bell peppers (different colors make for a nice presentation)
    1/2 cup breadcrumbs
    1/2 cup fresh parsley, chopped
    1 garlic clove, finely chopped
    1/3 cup olive oil
    1 teaspoon salt
    1/2 teaspoon black pepper
    2 tablespoons parmesan cheese, freshly grated
Preparation
    Cut the peppers in half lengthwise. Remove the seeds and pith. Slice into 1/2 wide strips.
    Coat a roasting pan with the olive oil.
    Add the peppers and remaining ingredients. Toss to coat.
    Roast at 400 degrees for 40 minutes.
