Crunchy Asian Noodle Salad - cooking recipe

Ingredients
    6 cups purple cabbage, finely sliced
    4 cups napa cabbage, finely sliced
    1 English cucumber, cut in moons
    1 red bell pepper, slices
    4 cups bean sprouts
    1 (8 ounce) bag Baby Spinach
    3 scallions, sliced
    1 bunch fresh cilantro, chopped
    12 2/3 ounces soba noodles, cooked, rinsed, and cooled
    Dressing
    1 lime, juice of
    8 tablespoons olive oil
    2 tablespoons sesame oil
    6 tablespoons soy sauce
    1/3 cup brown sugar
    3 tablespoons fresh ginger, chopped
    2 garlic cloves, chopped
    2 jalapenos, chopped
    1/2 bunch chopped fresh cilantro
    kosher salt
    black pepper, freshly ground and to taste
Preparation
    Mix together salad ingredients.
    Whisk together dressing ingredients and pour over salad.
    Mix with tongs or hands and serve on platter.
