Pineapple Carrot Coffee Cake - cooking recipe

Ingredients
    Cake
    1/3 cup sugar
    1 egg (or 1/4 cup egg substitute)
    3 tablespoons oil
    1 cup carrot, grated
    8 ounces crushed pineapple, w' juice
    1/3 cup orange juice
    1 1/2 cups flour
    1 1/2 teaspoons baking soda
    1 teaspoon cinnamon
    1/4 teaspoon salt
    Topping
    1/3 cup sugar
    1/3 cup walnuts, chopped
    3/4 teaspoon cinnamon
Preparation
    Preheat oven to 350*. Coat a 9\" round pan with cooking spray.
    Combine sugar, egg and oil, mixing well.
    Add carrots, pineapple and orange juice, blending well.
    Combine dry ingredients and then add to carrot mixture stirring until moist. Spread in prepared pan.
    Topping:.
    Mix all ingredients together and sprinkle over cake batter.
    Bake @350* for 25-35 minutes.
