Cinnamon And Whole Wheat Banana Bread - cooking recipe

Ingredients
    1 cup banana, mashed (3 medium)
    1/3 cup oil
    1/2 cup brown sugar, packed
    2 eggs
    1 3/4 cups whole wheat pastry flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 cup hot water
    1/2 cup walnuts, chopped
Preparation
    Preheat oven to 325 degrees, grease 9x5x3 loaf pan.
    Beat oil an sugar together.
    Add eggs, mix, add bananas, mix.
    Stir together dry ingredients, add alternately with hot water.
    Mix just until smooth, then stir in nuts.
    Bake 55 - 60 mins, cool for 20 mins before slicing (if you can wait).
    Tastes delicious toasted,freezes well.
