Moose Ragout - cooking recipe

Ingredients
    3 tablespoons olive oil
    1/2 teaspoon salt
    1 medium onion, sliced
    2 large fresh tomatoes, chopped
    2 garlic cloves, chopped
    1 1/2 cups celery, chopped
    2 lbs moose, cubed
    1 cup sliced mushrooms
    1 teaspoon paprika
    1/4 cup flour
Preparation
    Saute onion and garlic in oil.
    Add meat and paprika.
    Cover and cook over medium heat until meat is brown.
    Add tomatoes and celery.
    Cover and simmer 1 hour.
    Add mushrooms.
    Cover and cook until meat is tender, about another hour.
    Thicken liquid with flour and water paste.
    Serve over polenta or cooked noodles.
