Confetti Meatloaf - cooking recipe

Ingredients
    1 1/2 lbs ground beef
    5 ounces fresh spinach, finely chopped
    2 carrots, finely grated
    1 tablespoon Worcestershire sauce
    1 large egg, beaten
    3/4 cup tomato juice or 3/4 cup vegetable juice
    1/4 cup parmesan cheese, grated
    1/4 cup breadcrumbs
    1/4 cup onion, finely chopped
    1/4 cup ketchup
    1/4 teaspoon salt
    1/4 teaspoon pepper
Preparation
    Pre-heat oven to 350*.
    In a small bowl combine 1/4 c vegetable or tomato juice and ketchup. Set aside.
    Combine all other ingredients and mix well.
    Form into a loaf and place in a 1 qt loaf pan.
    Bake for 50-55 min, topping with ketchup mixture during the last five minutes of cooking.
    NOTES:
    I have used a variety of vegetables in this meatloaf, including zucchini, yellow squash, parsnips, etc. I also add a little fresh garlic. I have also doubled the recipe and cooked in a 9x13 glass baking dish when cooking for a crowd.
