Couscous Salad With Feta Cheese And Sun-Dried Tomatoes - cooking recipe

Ingredients
    1 cup boiling water
    1/2 cup sun-dried tomato (not packed in oil )
    1 (14 1/2 ounce) can vegetable broth
    1 1/4 cups couscous (uncooked )
    1/2 cup feta cheese (crumbled )
    1/4 cup fresh parsley (minced)
    1 1/2 teaspoons fresh oregano (minced or 1/2 tsp dried oregano )
    3 teaspoons lemon juice
    1 teaspoon water
    1 teaspoon olive oil
Preparation
    In a small bowl, pour boiling water over tomatoes. Let stand 5 minutes.
    in a small saucepan, bring broth to a boil and stir in couscous.
    Remove saucepan with broth and couscous from the heat and let it stand 5 minutes or until broth is absorbed.
    Drain and chop tomatoes and add couscous.
    Gently stir in remaining ingredients (feta cheese, parsley, oregano, lemon juice, tsp of water and olive oil)
    Serve warmed or chilled and -- Manga ! .
