Oatmeal Raisin Cookies With Applesauce - cooking recipe

1 teaspoon butter-flavored cooking spray
2 cups old fashioned oats
1 1/2 cups white whole wheat flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2/3 cup raisins, seedless
1 egg (large)
3 tablespoons canola oil
3/4 cup unsweetened applesauce
1 1/2 teaspoons vanilla extract
1/3 cup brown sugar
1/3 cup Splenda sugar substitute

Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray.
In a large bowl, combine flour, baking soda, oats, cinnamon, salt, and nutmeg. Toss with raisins.
In a medium bowl, cream together egg, applesauce, canola oil, vanilla, and the sugars. Whisk to blend thoroughly.
Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well.
Drop by the tablespoonful onto prepared cookie sheet, about 2 inches apart.
Bake for 12 to 15 minutes until golden brown.
Using a metal spatula, transfer cookies to a cooling rack.
When cool, store in an airtight container.
