Samosa Pancakes - cooking recipe

Ingredients
    1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
    10 ounces frozen chopped spinach, thawed and drained and squeezed dry
    1/2 cup sun-dried tomato packed in oil, well drained and finely chopped
    1 cup goat cheese, crumbled
    10 ounces frozen green peas, thawed
    1/4 cup matzo meal
    4 green onions, finely chopped
    2 eggs, beaten
    1/2 teaspoon curry powder
    salt and pepper
    plain yogurt, if desired (to garnish)
    mango chutney, if desired (to garnish)
    olive oil flavored cooking spray
Preparation
    Preheat oven to 425 degrees Fahrenheit.
    Spray 2 baking sheets with cooking spray.
    In a large bowl mix all ingredients together, except for cooking spray.
    Measure 1/4 cup pancake mixture and place on prepared baking sheet.
    Flatten.
    Bake for 15 minutes.
    Flip pancakes and bake for 10 minutes more.
    Serve with plain yogurt and mango chutney.
