Bourbon Chicken Food Truck - cooking recipe

Ingredients
    1/2 cup soy sauce
    1/2 cup brown sugar
    3 garlic cloves
    1 tablespoon freshly grated ginger
    1/2 cup chopped shallots or 1/2 cup onion
    8 boneless skinless chicken thighs, cut into small cubes
    1/2 cup bourbon whiskey
    1 tablespoon rice wine vinegar
    1 teaspoon red chili pepper flakes
Preparation
    In a small saucepan over medium heat, combine soy sauce, brown sugar, garlic, ginger, onion,bourbon, vinegar, and chili flakes; stir just until sugar has dissolved, about 2-3 minutes.
    Pour over chicken in a 9 x 13 baking dish and stir to coat.
    Cover and refrigerate for several hours or overnight.
    Bake in a preheated 350\u00b0F. oven for 1 hour, basting every 20 minutes with pan juices.
    Serve immediately with pan juices over cooked rice.
