Low Fat Pimento Cheese Spread - cooking recipe

1/2 cup fat-free cottage cheese
1/2 cup fat free cream cheese
4 ounces diced pimentos, with liquid
3 tablespoons stuffed green olives, diced
1/4 cup Greek yogurt
2 cups fat-free cheddar cheese, shredded and divided
Preparation

In a food processor blend the first 5 ingredients until smooth. Add 1 c cheese, blend just until mixed.
Stir in remaining cheese and chill for at least 2 hours.
