Leftover Mashed Potato Soup - cooking recipe
Ingredients

3 cups mashed potatoes
1/2 cup chopped onion
3 cups skim milk
4 tablespoons bacon bits
1/4 cup grated cheddar cheese
1 tablespoon canola oil
1 vegetable bouillon cube
salt and pepper, to taste
Preparation

Heat oil in pot on medium. Add onion and cook onions until glassy.
Stir in milk.
Mix in mashed potatoes, bacon bits and bouillon cube. Heat and continue stirring until mixed and lump free.
Mix in cheese and serve.
