Tzimmes In Orange Juice - cooking recipe

Ingredients
    10 large carrots, cut in slices
    1 1/2 cups dried pitted prunes
    2 1/2 cups orange juice
    1/3 cup sugar
    1/2 lemon, zest of
    1 teaspoon fresh grated ginger
Preparation
    Put carrots and prune in a pot.
    Add orange juice.
    Boil for 10 minutes.
    Stir in sugar.
    Simmer gently for 2 hours until liquid is almost absorbed.
    Sprinkle with lemon and ginger.
    Serve.
