Homemade Marinara Sauce - cooking recipe

Ingredients
    3 medium onions, diced
    8 fresh garlic cloves, finely minced (or more to taste)
    1/3 cup fresh basil
    1 sprig fresh thyme leaves or 1/2 teaspoon dried thyme
    1 sprig fresh oregano or 1 teaspoon dried oregano
    2 bay leaves (remove when done)
    2 sprigs fresh parsley or 1 teaspoon dried parsley
    1 teaspoon sea salt
    1 carrot
    1 zucchini (chopped)
    1 eggplant (chopped)
    5 lbs roma tomatoes
Preparation
    Place all ingredients in a large crockpot.
    cook overnight on low.
    Remove sprigs of herbs
    Next morningpuree all in a food processor.
    Use fresh or store in the fridge up to 1 week, or can it according to your canner's instructions for tomato products.
    I freeze this sauce in 1 qt freezer bags.
