Cranberry Orange Nut Bread - cooking recipe
Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons shortening or 2 tablespoons margarine
1 egg (well-beaten)
1 1/2 cups cranberries (fresh or frozen)
1/2 cup nuts, chopped
Preparation

Preheat oven to 350.
In a large bowl mix together flour, sugar, baking powder, salt and baking soda.
In a separate bowl combine beaten egg, orange juice and shortening.
Add wet ingredients to dry ingredients (you can add more OJ if necessary to obtain batter consistency).
Fold in orange peel, cranberries and nuts.
Place into a greased 9x5 loaf pan.
Bake for 55 minutes or until an inserted toothpick comes out clean.
cool on a rack for 15 minutes.
