Orange-Buckwheat Bread (Bread Machine) - cooking recipe

Ingredients
    1 1/2 pound loaf
    1 cup buttermilk
    1 large egg
    2 tablespoons unsalted butter, cut into pieces
    2 cups bread flour
    3/4 cup whole wheat flour
    1/3 cup light buckwheat flour
    2 tablespoons dark brown sugar
    1 orange, zest of, grated
    1 tablespoon gluten
    1 1/2 teaspoons salt
    2 1/4 teaspoons fast rising yeast (or 2 3/4 t. bread machine yeast)
    2 pound loaf
    1 1/3 cups buttermilk
    1 large egg
    3 tablespoons unsalted butter, cut into pieces
    3 cups bread flour
    1 cup whole wheat flour
    1/2 cup light buckwheat flour
    3 tablespoons dark brown sugar
    1 orange, zest of, grated
    1 tablespoon gluten, plus
    1 teaspoon gluten
    2 teaspoons salt
    2 1/2 teaspoons fast rising yeast (or 1 T. bread machine yeast)
Preparation
    Add all ingredients to the bread pan according to the order in the manufacturer's instructions.
    Set crust on dark and program for the Basic cycle; press Start.
    *The dough ball will be moist and springy.
    When the baking cycle ends, immediately remove the bread from the pan and place it on a rack; let cool to room temperature before slicing.
